Thank you friends for all of your comments and emails! I woke up this morning feeling even better, especially after surviving a weekend of good eating and no coffee drinking. Although I have to admit that on Saturday night, after joyfully consuming a big-a*& burger and helping of some super salty fries, I craved a coffee on the drive home. I even moaned a little while driving past the Starbucks.
Superbowl here at the Halu-Halo residence was LOUD! and LOUDER! We were a house divided, and what a close game! But what we knew for sure was that Nachos make it better, especially with bbq'd ground beef. Now, that, dear internet, definitely took my mind of Xtina's lackluster performance. C'mon, how can you not know the words to the Star Spangled Banner?
BBQ'd Beef Nachos
2 tbs vegetable oil
1.5 pounds of ground beef
3/4 cup your favorite bbq sauce
garlic powder, salt, chili powder, paprika, red pepper flakes
1 block of velveta, melted or 1 bottle of queso
1 avocado rough chopped
1/2 jalapeno pepper, sliced
Cook ground beef in oil until no longer pink, discard drippings. Add bbq sauce, and adjust your spices as needed. (We love a lot of all I mentioned!). Meanwhile, melt the cheese in the microwave or in a separate pot. Layer the chips, beef, cheese, avocados and jalapeno.
